Another Great Trader Joe's Find

Ok, I'm pretty much obsessed with this new find from Trader Joe's.

Almond Butter with Flaxseeds! It sounded interesting, so I had to try it. I figured it'd either be disgusting (that was my hubby's bet!) or tasty. I tried it on some Nut Thins Hazelnut Crackers and was pleasantly surprised to find this almond butter to be delicious! I have since had it almost every morning on Udi's cinnamon raisin bread. It's got such a mild, yet rich, flavor that I just can't resist. After a week of this yummy goodness I think I can safely say I like it even better than regular almond butter (it's definitely easier to spread!).

Tasty & Easy Gluten Free Chicken Tenders

Ready for a quick and delicious dinner?  You've come to the right place! 
I came across this recipe in the September issue of Easy Eats online magazine.  You've heard us rave about this magazine a few times now and we just can't say enough.  It's great!  There is so much valuable information and the recipes are just delicious!  I'm a recipe tester for them, so I've got a new recipe that I'll post after their next issue comes out.  But for now, let me tell you about these tasty chicken tenders.  They are good, and fairly quick to make. 

We made the whole meal relatively quick by adding a few ready to bake/microwave items.  First, we had some scalloped potatoes from Costco that come ready to bake.  Oh man, we eyed these the other day (thank you Costco samples!) and HAD to buy them.  We were beyond elated to find already made scalloped potatoes that were gluten free.  While we do enjoy cooking, some things would just take too long for a weeknight meal.  Let me add, these potatoes were delicious!  SO tasty!  I then picked up an assortment of veggies (ready to steam in the microwave) from Fresh and Easy.  I say just "I" here rather than "we" seeing as I was the only one who ate these! :)  Granted, they had a buttery sauce on them and for some reason when those mixed with the veggies in the microwave they made our WHOLE house stink for like two days!  Gross!  But, they did taste pretty good.  

That was the extent of my "cooking."  The rest was done by wonderful husband.  He followed this recipe (again, from Easy Eats) with no alterations.  However, just to note, he did use organic chicken tenders from Trader Joes.

Oven-Roasted Chicken Tenders

  • Serves 4
  • Prep time: 10 minutes
  • Cook time: 15 minutes
  • Gluten-free nonstick cooking spay
  • 2½ cups gluten-free Corn Chex cereal
  • 1 teaspoon dried basil
  • salt and pepper
  • 1 large egg or equivalent egg replacement
  • ¼ cup milk or nondairy milk
  • 1 pound chicken tenders (or skinless, boneless breasts cut into thin strips)
  1. Preheat oven to 350°. Lightly grease a large baking sheet with cooking spray. In a food processor, pulse the cereal and dried basil, salt into coarse crumbs. Season with salt and pepper and transfer crumb mixture to a shallow dish or pie plate. In another shallow dish, whisk together the egg and milk.
  2. Dip each chicken strip into the egg mixture to coat thoroughly, then roll in the cereal crumbs. Place on the prepared baking pan. Repeat with all the chicken pieces. Spray lightly with cooking spray and bake until cooked through, about 15 minutes.

Easy Gluten Free Chocolate Peanut Butter Cups

The excitement of anything chocolate and peanut butter is always a favorite desire in our household. But something that's both tasty as well as healthy is hard to find.

Rachel was of course in one of her moods, ya know, craving something yummy moods. (I think we're both always like that) Anywho so she decided to make some amazing chocolate peanut butter cups.

This recipe comes from Alicia Silverstone's The Kind Diet.

In her book, Alicia says "Back in the day, I was obsessed with Reese's Peanut Butter Cups. Now I make this healthier version and they are way better. In fact, I think they are the most ridiculously delicious things in the entire world. Look for graham crackers that are naturally sweetened or low in sugar (Health Valley makes a good one), and store the leftover crackers or crumbs in an airtight container for future use."






So you start out with an assortment of goodies.

Now the original recipe in The Kind Diet is Vegan
Rachel changed the recipe a bit.
MAKES 12 
(Ingredients)
  • 5 whole graham cracker squares (GF S'moreables)
  • 1/2 cup Earth Balance butter (Unsalted Organic Butter)
  • 3/4 cup crunchy peanut butter (preferably unsweetened and unsalted)
  • 1/4 cup maple sugar or other granulated sweetener (1/8 with agave and 1/8 with organic sugar)
  • 1 cup grain-sweetened, nondairy chocolate or carob chips
  • 1/4 cup soy, rice, or nut milk (Organic Reduced Fat Milk 2%)
  • 1/4 cup chopped pecans, almonds, or peanuts

    (Instructions)
  1. Line a 12-cup muffin tin with paper liners. (If You Care makes unbleached liners made from recycled paper.) We used a 24 cup mini muffin tin because of how rich these things are...
  2. Break the graham crackers into large chunks and place in a food processor or blender. Pulse on and off until they are ground to fine crumbs. Measure out 3/4 cup of crumbs (reserve the rest for another use) and set aside.
  3. Melt the butter in a small saucepan over medium heat. Stir in the peanut butter, graham cracker crumbs, and maple sugar and mix well. Remove the mixture from the heat. Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.

      4.  Combine the chocolate and milk in another pan. Stir over medium heat until the chocolate has melted. 




     5.   Spoon the chocolate evenly over the peanut butter mixture.


     6.   Top with chopped nuts. Place in the refrigerator to set for at least 2 hours before serving.


     7.   ENJOY!!!


Now we chose the smaller muffins because these bad boys are super rich, but OHH SO YUMMY! We put half of the incredible desserts in the freezer to save for a later day.

Nature's Food Market and Juice Bar!

Such a quaint little place in good 'ol Bakersfield, CA!  Located in downtown, they offer occasional raw food classes on Sunday's (seems to be about once a month)!  Can you believe it?  In Bakersfield!?!?!  Ok...let me compose myself so I can continue.  :)  I just can't believe that something like this is in our town?  I'm not a hard-core raw food eater by any means, and this just excites me!  I can't wait to go to one of their classes!

Here, let me show you what their facebook is advertising for this weekend:

  • The menu for the class this Sunday is as follows: Limeade Slushies, Portabello Mushroom Burgers, Pineapple Coleslaw, Sweet-n-Savory Beet Chips, and Strawberry Softserve! The cost for the class is $20/person or $35/couple...begins at 3 pm. Please RSVP no later than Friday before 3pm! Blessings!
Doesn't it just sound fun?  Well, I'm not so sure about the beet chips, but I'd be game to try the other options (after, of course, verifying that they're all gluten free).


But what also excites me about this place are the nature (no pun intended...hehe) of the products they offer.  From gluten-free, to vegan, to vegetarian they offer many every day and specialty products.  There's also a rockin' juice bar (hence the store's name) that includes juices, smoothies, AND fresh daily raw/vegan desserts!  Woohoo!!!

Gluten Free Mac and Cheese-Is It Edible?

Mac and Cheese...a standard and easy comfort food for many, but does that comfort trasfer with the gluten free version? 

Trader Joe's has their own brand of Gluten Free Rice Mac and Cheese.  The box looks so happy with a smiley face made out of cheese macaroni.  I had high hopes.  Now, while I knew better than to expect the cheesy creamyness of Kraft, I couldn't help but hope for it.  A quick easy meal that satisfies some inner desire from childhood, who wouldn't want that?

As I continued cooking, my hopes remained high.  The process was simple, comparative to the original.  Boil water, add pasta, drain, add cheese sauce and milk.  DONE!  Would it be a success?

It looked good.  It mixed well together.  But was that enough?  Sadly, the overall conclusion would be no.  The pasta was al dente, and tasted fine, but the cheese sauce just didn't add that necessary element.  There is a certain nostalgia that comes along with Mac and Cheese and you can't miss it.  This final dish tasted cheesy, but not the right cheesy.  This was different, and a bit funky.  There was no smooth, creamy, melt in your mouth texture.  I just couldn't close my eyes and imagine being a 7 year old girl again.

However, it was decent enough that I didn't have to make another meal, so that was a plus!  And now begins my search for a delectable Mac and Cheese.  I do believe I will venture into the homemade world for this one!

Pepperoni Pizza Cups-Deliciously Gluten Free!

From start to finish, I had a good feeling about these pizza cups.
1. I LOVE pizza.
2. My husband LOVES pizza.
3. The process didn't seem as long as making a complete pizza from scratch.


Needless to say, my hopes were high and these babies didn't disappoint.  We paired them with a nice green salad and just sat back as each bite was savored in our mouths.  Mmm...just writing about them makes me want to eat some more!  Seriously people, gluten free or not, if you like pizza you will love these pizza cups.  Pair them with extra marinara sauce and ranch!  Bon appetit!

Pepperoni Pizza Cups


Preheat oven to 400 and generously grease a 12-cup muffin pan.

  • 2 cups Gluten Free Bisquick
  • 2 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 1 1/2 cups Pepperoni, chopped
  • 1/2 cup Shredded Mozzarella
  • 2 Eggs
  • 1 1/2 cups Milk or Nondairy Milk
  • 1/4 cup Pizza Sauce (*I used closer to 3/4-1 cup and in my opinion that added much more of a good "pizza" flavor)
In a large bowl, whisk together the Bisquick mix, baking powder and salt.  Add the pepperoni, mozzarella, eggs and milk; stir to combine.

Mix in the pizza sauce (the recipe calls to "swirl" in the sauce, but I wanted it all mixed in!) and divide among the muffin cups; sprinkle with mozzarella.  Bake until golden and a toothpick inserted in the center comes out clean, 25 to 20 minutes.

New Gluten Free Magazine

Check this out!


There's a new gluten free ezine out there from Silvia Nardone, author of Cooking for Isaiah.

Easy Eats is a wonderful magazine that offers a plethora of information on the gluten free lifestyle.  That's right people, lifestyle.  They offer great gluten free recipes (we've tried a few and loved all of them!), along with tips and even yoga! :)  This magazine seems to be doing it right, and that's just my impression of the first issue.  The photography is also beautful, such as added bonus!  I'm so excited to see what's next.  Plus, as a recipe tester, I'm even more excited to be a part of the process!

Gluten Free Oatmeal-Melt In Your Mouth And Warm Your Tummy!

As I've mentioned before, I love breakfast.  Let me rephrase that, WE love breakfast!  My husband and I could probably eat variations of breakfast foods for every meal every day and it would likely take a few weeks for us to get sick of it.  From a simple bowl of cereal to an all out gourmet feast of eggs, bacon and french toast (with, of course, homemade strawberry sauce) we just love the stuff.

Our palates seem to cross seamlessly on all things breakfast, with the exception of oatmeal.  It baffles me.  I love the stuff.  He hates it.  It's so funny.  I think he may even dislike the smell of it.

So today, as I sit home sick while he slaves away at work, I am left to fend for myself.  This amazing man has taken care of me for the last two days, and now it's my turn to see to it that I eat!  Now some may wonder why I would choose to make oatmeal when I don't feel good, but the reason to me is obvious.  I know that a bowl of oatmeal will not only satisfy my hunger better than a simple bowl of EnviroKids (which is always tasty), but it will also comfort me as it melts in my mouth.  I love knowing I can whip together a quick bowl of oatmeal and I won't be up in an hour needing to eat again!  And really, it's not too much work.  Trust me, that's being said from a woman who has not moved much from the couch the last two days (another shoutout to my amazing husband for taking care of me!).  

When I make oatmeal, I tend to cook it a few minutes longer than the minimum time recommended, just the give it that melt in your mouth consistency.  Try it.  Follow this recipe and see for yourself.  

Gluten Free Oatmeal
  • Boil 1 cup water.
  • Add 1/2 cup gluten free oats (I prefer Trader Joe's brand).
  • Lower the heat and cook for 10 minutes.  
  • Add desired amount of cranberries, chopped walnuts or whatever toppings you prefer.
  • Cook another 3-5 minutes.  
  • Pour into bowl, sprinkle with brown sugar, add milk and enjoy.

New Celiacs-Special 2 day offer

Gluten Free Date Night Ends At The Hospital

Date night, aka I love my spouse and we don't feel like cooking night, is a wonderful and regular occurrence in our house. 

My husband and I love spending time together (yes, we're kinda "that" couple!) and we enjoy taking a break from cooking. It's so nice to get out and relax, while knowing someone else is doing the cooking, and most importantly the cleaning!! Ahh!!

However, this great escape can easily turn into a real headache for Celiac's (and their significant other) when trying to figure out where to go. In fact, this can be even more difficult for the non-Celiac who is trying to plan an evening for their gluten free spouse.

I (Crosby) feel that the most important thing is having fun. So often going out can feel like a chore, but finding out what the restaurant carries beforehand makes everything so easy.

So we went to Moo Creamery, and surprisingly enough, wasn't too busy for a Friday night!

It was yummy, as always!

Rachel loves their turkey tostada things and I always grab a burger.

But this date night was something different; we ended up in the hospital.

While Rachel and I were walking around Target getting a gift for someone, she started complaining of pains in her stomach. (Ya know, typical celiac after eating anything not from home feeling.)

So we didn't think much of it until we got home. Rachel started complaining of stomach cramps, headaches, backaches, hot flashes, swelling feet, smelling tomatoes, seeing unicorns... hahahah ya know the works.

So she goes to the bathroom and she says she found some blood in her urine, and like a good husband, I rush onto WebMD to find out she has cancer.

Then I do a better search of more educated and informative sites to discover we probably should go to the hospital.

At this point it's 10:30 p.m. and we get to the emergency room.

Rachel had to do some urine samples and was not too happy about being in the emergency room so late.

So we had to sit and wait to be called in. I never understood why we have to sit and wait at an Emergency Room... it just kind of confuses me a bit, but oh well.

So at this point Rachel and I are staring at people in the waiting room trying to figure out why they're there.

There was a kid who had ripped off the bottom of his foot. His dad's feet were covered in blood and his mom was having a nervous panic attack. His dad was trying to cheer him up with phrases like, "don't worry son, if they have to cut your leg off, maybe they can attach a machine gun to it..." or, "Scars are cool... maybe they'll only have to amputate a little bit..." his mom didn't think it was funny. We never found out the reason why, but we think he was there because he was being stupid! hahaha :)

There were two guys that got wheeled in that looked like they had been in a bar fight. They were with a woman who had a puke stain down her shirt. (Milk chugging contest?)

Everyone else was pregnant... Seriously, at least 8 women there were pregnant.

So by this point it's midnight and we finally get called in.

We're walked around the emergency room and sat on a gurney outside the Trauma room.

The whole room was about 40°F and I think I was able to see my breath.

So someone comes by and checks on us and gives Rachel a blanket.

We hear screaming coming out of one of the rooms and two police officers come walking in.

The two dudes that we thought got in a bar fight, apparently one of them had been shot in the hand and the cops were coming to talk with them.

Maybe a "drunken gun fight show to express their love for their one true milk chugging maiden?"

So it's about 1 a.m. and the doctor comes by and checks on Rachel. He says that all the tests came back fine and that it was probably a kidney stone that she was passing. My wife is a trooper!

So he said he doesn't really want to do a CT scan because it's about the equivalent of 300 X-rays and just prescribed some pain medicine for Rachel.

So now it's 2 a.m. and we finally get to go home.

Rachel and I spent the rest of the weekend catching up on sleep and watching movies!

So date night, turned in to a long date weekend :).

Gluten Free at Claim Jumpers

Mmm...delicious! That's all I have to say about these gluten free chicken quesadilla's at Claim Jumper's restaurant.

Corn tortillas, chicken, cheese, pico de gallo, guacamole, black beans and yummy goodness!
My hubby also enjoyed his gluten-full garlic cheesebread, cornbread croutons on his salad, and a delectable trip tip!! Yum yum!!!

Do be forewarned, while I enjoyed the quesadilla, the gluten free selection here is very limited. Besides what I ordered, you can pretty much just get steak or salad.

There are no appetizers available and only one salad dressing, a citrus vinaigrette, which I liked but it did have a peculiar taste that some may not enjoy. It's sweet, kinda like biting into a mandarin orange, but then it has a strong vinegar aftertaste that's quite strong.

So if you're a steak and potato kind of person, this is your place. Or if you just came off a flight from Texas and are hungry, it's great too!! :-)

Another note, our wait staff wasn't too knowledgable with what is or isn't gluten free, (other than slapping a gluten free menu in your lap), but they were willing to find out for us.
