Our palates seem to cross seamlessly on all things breakfast, with the exception of oatmeal. It baffles me. I love the stuff. He hates it. It's so funny. I think he may even dislike the smell of it.
So today, as I sit home sick while he slaves away at work, I am left to fend for myself. This amazing man has taken care of me for the last two days, and now it's my turn to see to it that I eat! Now some may wonder why I would choose to make oatmeal when I don't feel good, but the reason to me is obvious. I know that a bowl of oatmeal will not only satisfy my hunger better than a simple bowl of EnviroKids (which is always tasty), but it will also comfort me as it melts in my mouth. I love knowing I can whip together a quick bowl of oatmeal and I won't be up in an hour needing to eat again! And really, it's not too much work. Trust me, that's being said from a woman who has not moved much from the couch the last two days (another shoutout to my amazing husband for taking care of me!).
When I make oatmeal, I tend to cook it a few minutes longer than the minimum time recommended, just the give it that melt in your mouth consistency. Try it. Follow this recipe and see for yourself.
Gluten Free Oatmeal
- Boil 1 cup water.
- Add 1/2 cup gluten free oats (I prefer Trader Joe's brand).
- Lower the heat and cook for 10 minutes.
- Add desired amount of cranberries, chopped walnuts or whatever toppings you prefer.
- Cook another 3-5 minutes.
- Pour into bowl, sprinkle with brown sugar, add milk and enjoy.
